A special recipe that's good even frozen & used later.
Best Squash Souffle
2 lbs. squash & 1 med onion cooked together until tender; drain
Add 2 eggs slightly beaten
3T melted butter
3T flour
1 cup milk
1 tsp salt
1tsp sugar
(May also add garlic, celery powder, other seasonings to taste
½ cup sharp cheddar cheese
Mix in ¼ cup bread crumbs
Top with cheese and crumbs
Bake 350 30 min.
